Recent Baking Escapades

I’ve been in a baking mood… Especially for cookies :) Here’s what’s been baking at my house…
Peanut Butter Cookies! I LOVE them! The only thing wrong with the ones I baked this time, were they weren’t very soft :( Maybe I’ll have to slip a slice of bread in the container next time :)
And sugar cookies… Most of you all know that I don’t really like sugar cookies… Joelle LOVES them! I’m perfectly happy to bake and decorate them, but not eat them. Sugar, sugar, sugar. I don’t think they’re too tasty :P But here are the pictures anyway :)
Recipe for Peanut Butter Cookies:
1 cup butter
1 cup peanut butter
1 cup brown sugar
1 cup sugar
2 eggs
3 cups flour
1/2 teaspoon salt
2 teaspoons soda
1 teaspoon baking powder
1 teaspoon vanilla
Cream butter and peanut butter together. Add sugar and continue to beat. Add eggs and vanilla and beat until fluffy. Sift flour. Measure and add salt, soda, and baking powder. Sift again. Gradually add sifted dry ingredients to creamed mixture and mix thoroughly. Chill dough in refrigerator for several hours. Shape dough into balls 1 inch in diameter. Place balls 2-3 inches apart on greased baking sheet. Press flat with a fork. Bake at 375 degrees for 12-15 minutes. Yields about 7 dozen cookies.
Recipe for Sugar Cookies {Not the frosting}
1 cup unsalted butter
2 1/2 cups flour
1 large egg
2/3 cup sugar
1 teaspoon vanilla
Cream butter and sugar together until light and fluffy. Add egg, beating thoroughly. Add sifted flour and beat until well mixed. Stir in vanilla and mix completely. Chill dough several hours or overnight. When ready to bake, preheat oven to 350 degrees. Roll dough, approximately 1/8″ thick, on lightly floured surface. Cut with foured cutters and place on ungreased baking sheet with spatula. Bake 8-10 minutes, or until very lightly colored. Cool completely on rack before decorating.
